As 2024 comes to a close, it’s the perfect moment to celebrate the incredible roasters who partnered with us this year to bring Thieves Coffee to life. From every corner of Australia, these talented roasters delivered unforgettable brews straight to your cup. So, grab your favorite mug and join us as we take one last look back at the exceptional Aussie roasters who made 2024 a truly delicious year for coffee lovers everywhere.
January:
Mecca Coffee - One of the country’s early pioneers in specialty coffee
Starting off the year, January saw the spotlight on truly one of the original pioneers in specialty coffee, the gang over at Mecca! Always focused on maintaining close relationships with producers, roasting to excellence and rallying their coffee loving community – Mecca stays true to their industry values while evolving and taking on new challenges.
February:
Elementary Coffee - Introducing our very first Adelaide roaster!
February ushered in Elementary Coffee. The gang over at Elementary are on a mission to provide the people of South Australia and the rest of the country with great coffee. Catch them roasting and slinging some seriously tasty brews and brunch from their two beautiful Adelaide cafes that are home to their talented line-up of baristas, roasters and chefs. Melbourne may be dubbed the ‘Coffee Capital’ of Australia, but Adelaide is right up there and even has their own unique, local style of roasting.
March:
Margaret River Roasting Co - Home Grown Coffee
This March, Margaret River Roasting Co. has chosen to showcase coffee beans grown in Queensland! This is the very first time Thieves is featuring coffee grown within Australia – pretty cool right? Their very special ‘Yira Yarkiny’ espresso roast comes from Jack Murat’s farm in Mareeba – located high on the Atherton Tablelands outside Cairns. The location is perfect for growing coffee beans. Drinking a cup of ‘Yira Yarkiny’ also means that you’re supporting Children’s Ground – a brilliant organisation that empowers First Nations communities to lead for the future and drive national reform.
April:
White Horse Coffee - Commitment to quality & community in The Shire.
It’s 2008. Twilight fever sweeps the world. Katy Perry releases ‘I Kissed A Girl’, and Matthew Sprem and Dominick Majdandzic open their very first espresso bar in Sydney’s southern suburb of Sutherland – lovingly referred to as The Shire. It was a big year for all, that’s for sure! Fast forward 15 years, White Horse Coffee is winning awards, has mastered the art of roasting and continues to sing The Shire’s praises. Supplying cafes with their coffee all over Australia, sharing a little piece of The Shire with everyone.
May:
Villino Coffee Roasters - Instigators and influencers in the Tasmanian coffee scene.
In May, we took you south of the Bass Straight to Tasmania, to our good friends over at Villino Coffee Roasters. Villino’s flagship café opened its doors back in 2007, serving delicious Australian roasted coffee to eager Hobart residents. Shortly after opening their first café, they began roasting their very own coffee – giving them control over quality and freshness. Their coffee was a massive hit and helped pave the way for the specialty coffee industry in Tasmania.
June:
Redbrick Coffee - Coffee For All!
It feels like we’ve been taking a journey around Australia the past few months. Tasmania, New South Wales, Western Australia, South Australia, Victoria and now ACT. Introducing our featured roaster for June, Redbrick Coffee! Throughout Redbrick’s lifespan it’s become apparent that they want their coffee to be enjoyable and approachable. A go-to specialty coffee roastery for local and inter- state customers alike. During our time drinking their coffee, meeting with the team and learning more about Redbrick we can agree that their coffee is very much enjoyable and approachable. We’re confident you’ll feel the same way!
July:
Prodigal Coffee Roasters - Drink Recklessly
Kicking off Winter, we're back in Mornington, Victoria, for an edgy take on specialty coffee! Started by industry pro Caleb Podhaczky, Prodigal kicked off during Covid, with Caleb revisiting his passion for roasting. Fast forward to today, their brand new roastery is located at the base of the Mornington Peninsula, in the bay side town of Hastings, only an hour drive from Melbourne. They also just opened up an espresso bar onsite which is a must visit.
August:
Commonfolk Coffee Roasters - On a Mission to do good
Also based on the Mornington Peninsula in Victoria, Commonfolk is actually neighbours and good friends with our last month’s feature roaster, Prodigal Coffee! These two coffee superstars are killing it in their region. Commonfolk currently has three cafes where you can enjoy their coffee and eat some tasty treats: in Mornington, Frankston and South Yarra. Alongside their buddies at Prodigal, they’ve upped the caffeine game on the peninsula, making it a ‘must visit’ destination for coffee lovers.
September:
Stitch Coffee Roasters - Pushing the boundaries in specialty coffee
Stitch Coffee was founded on the belief that coffee is like a tapestry — a rich weaving of origins and flavours to create a harmonious and delicious cup. The journey began almost a decade ago, with Nawar Adra, the owner and founder, who started his career as a barista in the renowned Sydney coffee scene. It was there that Nawar’s passion for roasting emerged. Driven by his innovative vision, he opened the roastery in 2015 and Stitch Coffee quickly became known in the industry as a coffee roaster that is bold, fun and quality focused.
October:
Criteria Coffee Roasters - Brew coffee at home with Craig!
Craig from Criteria is a legend - winning many awards and even become the Australian Barista Champion! Criteria deals directly in small volumes and has a close and trustworthy relationship with their partners who supply them with their green beans. Their partners play a crucial role, advocating for Criteria as a customer, but also making sure the producers are paid appropriately and that the green beans arrive on time and to everyone’s quality standards. With this in mind, they look for coffees that have a transparent supply chain, and are of specialty grade. Quality and transparency is incredibly important to them.
November:
ST. ALi Coffee - Your go-to coffee for a reason!
As summer rolls around, we bring you the gang over at ST ALi! Known for roasting your fave go-to morning coffee that tends to be sweet, balanced, and makes you want another cup. They believe that great people grow fantastic coffee, and their industry relationships originate from years of friendship.Want to visit them in-person? Oh! They also have a venue in Brisbane! Flying to Southeast Asia? No problem. Visit the ST ALi Melbourne Airport cafes for a coffee before your flight then check-out their Bali, Jakarta or Manila hotspots. Like we said, they’re everywhere now!
December:
Infinity Coffee - Tips from the tasting pros!
To cap off the year, we've invited Infinity Coffee Roasters, who have been supplying Australians with delicious roasts since 2012 from their headquarters in the middle of the cafe studded Sydney suburb of Hornsby. Also, their founder Frankie Shi has also been a cupping champion, so he definitely knows the good stuff! Not a bad way to end the year!

2024 has been an incredible chapter for Thieves Coffee - we've turned 10 this year! And it’s all thanks to you—our amazing community—and every talented roaster who made every cup truly special. Each roaster brought their unique story, passion, and craft to the Thieves Coffee experience, making every month an adventure in flavor for thousands of subscribers both nationwide and globally. As we close the book on 2024, we’re filled with gratitude and excitement for what lies ahead. Your unwavering support has made it all possible, and we couldn’t be more thankful to have you along for the journey.
